Who LOVES Boston Market!? *raises hand* Try this awesome copycat recipe from the Top Secret Recipes book. I think it’s even better than the real thing, but you can be the judge. Let me know what you thought in the comments!
6 cups mashed sweet potatoes
3/4 cup dark brown sugar
1/2 cup heavy cream
1/4 cup melted butter
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups mini marshmallows
1/4 cup rolled oats
2 tablespoons dark brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
2 tablespoons cold butter
Place sweet potatoes on baking sheet and bake for about an hour (or until tender) at 400F. Allow to cool a bit before scraping out the insides.
Use an electric mixer to beat the potatoes until they are smooth. Measure 6 cups of the mashed sweet potatoes and place in a large bowl.
Add brown sugar, heavy cream, melted butter, cinnamon and salt to the sweet potatoes with mixer until well blended.
Set oven to 350F and pour the sweet potato mixture into an 8×8 baking dish.
Make the oatmeal streusel: use a food processor or blender to grind rolled oats into a course flour, leaving some oats visible.
Combine the oat flour with the brown sugar, flour, and cinnamon in a small bowl. Cut the cold butter into the mixture using a fork. Sprinkle this oatmeal stresuel over the sweet potato mixture and bake for 50 to 60 minutes or until the oatmeal mixture begins to brown a bit.
Spread the marshmallows over the top of the casserole as soon as you remove it from the oven. Let it sit for about 10 or 15 minutes and then serve.
This dish is great for Thanksgiving, or any time really. It tastes just like Boston Market’s, for WAY less!
